Does anyone know of a CBT for the Thunder Scientific 2500? Or a good training video for it.

Ask CPGRULES about it.  He knows about using and calibrating the Thunder Scientific 2500, and would probably know if there is any CBT or other training available.  If you message him, tell him I sent you.  Could be he could answer some questions about the system if no training is available.

Section 4 of the maintenance manual breaks down the calibration fairly well.  I calibrated ours last year and it's definitely time consuming!  I also used a PRT connected to a 3458A for the temperature calibration to make sure to get the correct coefficients stored.
